Can you run pex through joists
I have since replaced all the faucets and a couple of pipes that split and am finishing the sheetrock work and replacing the carpet and hardwood floors that buckled.
It's been a slow go but am preparing to move in soon. I just received my 1st water bill since having it turned back on and am having a hard time swallowing that pill after all the time and money I've been out repairing everything, when in my mind this all could've been avoided had the water been shut off like I had requested!

Aerove, yes, the goal is to get everything to work from the one switch location you already have. The black switch is a thin in-line dimmer pad for use in the 'plug-in' type method. This is not ideal for you because you would need to turn on the switch at the wall and then go over to the cabinets to set the light level.
Because of where your recessed in the ceiling are badly placed and scarce, they will surely cast shadows when working at the outside counter. For this reason, I would put in a little more lumens of undercabinet lighting than you will normally want and make sure to place the lights near the front of the cabinets to give more direct light on any tasks you ate performing on that counter surface.
Therefore, I highly suggest the 'hard wired' dimmer in the first example that works with a dimmer at the wall switch location. Since I see no new pictures of the area, I will assume that all my usual tricks for running the wire to the other cabinet via the 'preferred' route fall a hair short. So you have 25 min with sheetrock before floor failure and you have 10 min without sheetrock under normal fire spread. Other than that even if you can leave that exposed, only very few who can find inspiration in it.
I can see this being a barn style home, or a loft with 12'' ceilings, or a cabin in the middle of nowhere or something commercial yes, but me personally looking at something like this every day, I just don't see any attraction in it. With that being said, that ceiling will always be a dust attraction, and if you have second floor, each time someone walks up, etc not only it will be noisy, you will have dust particles being released from wood and flow around all over the place IMO to have something exposed in a living area creates unhealthy environment.

It still would be annoying if a line was blocked for that reason. Since code requires insulation in the crawlspace, I insulate first and then hang the PEX with straps.
